TORTILLA SOUP
4 cups shredded Chicken
½ Pack favorite taco seasoning
3 Table spoons Garlic Chipotle sauce
Shred chicken and mix with above ingredients. Let stand.
1 cup finely chopped celery
½ cup onion
Sautee in 1-2 table spoons of oil until onions are translucent
Add chicken mixture
Pour in 4 cups chicken stock or broth.
Pour in 28 oz petite diced tomatoes
1 can refried beans
2oz green chilies
Let simmer 1 hour.
Add 1 can drained black beans.
Let simmer ½ hour
1 cup corn
Simmer 20 minutes
Serve. Serve with crushed corn tortilla chips, Monterey Jack cheese and avocados.
